Cooking Elk Tenderloin
ELK TENDERLOIN or Elk Filet Mignon is the premier cut of elk meat. It is highly sought after by chefs throughout the culinary world. Only less than 2% of the carcass is tenderloin. Aging is closely monitored. Since each of our tenderloins are retrieved first from the carcass, we have the perfect pH factor of 5.6 to 5.8 meaning a delicious taste and the "cut with a fork" consistency". When cooked rare, marinades are not needed to hide taste or tenderize. It is, however, a personal choice. If you choose to marinade, do so for only 3-4 hours prior to grilling. Recommended grilling time is 7 minutes per inch of thickness with a 5 minute rest prior to serving. Rare or medium rare is recommended. 130 to 145 degrees Fahrenheit should be indicated on your meat thermometer. Enjoy.

We use only young animals, predominately females, and process them in a similar manner to beef so as to eliminate any possibility of gamey taste or irregular consistency. All meat cut names are similar to beef descriptions so as to allow easy identification of your favorite cut. Elk meat is lower in fat and cholesterol but higher in protein, so smaller portions are more filling, and much more heart healthy!
