ELK Rib Eye steaks....THE BEST THERE IS!   ... the hunter’s and rancher’s favorite

Grande Natural Meats has:         

Elk Rib Eye Steaks - 8 oz. everyday and 10 oz on special order, 3/4 to 1.5 inch thick cuts, in 1 to 1.25 lb packages

Whole Elk Rib Eye loins - 3 to 4.5 lbs each

Thaw frozen meat in the refrigerator overnight.

Trim away fat, fascia or "silver skin" before cooking.   Consider marinades to enhance flavor, however, Grande Meats product has an aging time that is exact for the perfect pH level of taste.

Elk should not be cooked past the medium rare stage. If you like your steaks rare or medium rare, use your meat thermometer to check temperature.  Rare is 130 to 135 degrees, medium rare is 135 to 140 degrees and medium is 140 to 145 degrees.  To keep the maximum flavor and juicynest, maximum grilling time is about 7 minutes per one inch of thickness with a 5 minute rest.

Thick steaks, those over 1" benefit from being left to rest for a few minutes longer after cooking to ensure the pinkness is evenly spread.

Elk is ideal for barbecuing because it is so lean. Be careful not to over cook. 

Lastly, light marinating in an oil base is great because the steaks will not stick to the grill and this can help reserve juiciness.
